Delicious wraps for an outing!

The other day, my friends and I went cycling. We met at a very early time, so I thought of making wraps for them!

I love this wrap, but I was too ambitious in putting so many things inside that they were almost bursting! So I had to wrap them with a paper towel to keep them in place.

You can really put whatever you like inside. I had cherry tomatoes, corn, avocado, hashbrowns, carrots, toasted pecans, iceberg lettuce, and luncheon meat.

If I do this all over again, I will make them without the meat and hashbrowns! It will already be super delicious!

Ingredients (makes 6):

-1 Red Onion, diced and soaked in sugar water (or sweet onions)
- 6 Cherry Tomatoes, cut in half

- 1/2 can of Corn, drained

Sauce to mix onion, cherry tomatoes and corn in:
- juice from 1 Lime / Lemon

- 1 tablespoon Apple Cider Vinegar (or lime/lemon juice)
- 2 teaspoon Maple Syrup (or honey)
- 1 tablespoon Extra Virgin Olive Oil (optional)

- 6 Wraps (of any variety)
- Handful of Pecans (or any other nuts)
- 3 slices of Luncheon Meat
- 3 Hashbrowns

- 1 medium-sized Carrot, washed and sliced
- 6 leaves of Lettuce, washed
- 1 Avocado, peeled, sliced into strips, and drizzled with some lime/lemon juice

- Mayonnaise (optional)

LET'S MAKE!

1. In a big bowl, mix all the ingredients for the sauce together.

2. Drain diced onions from sugar water.

3. Toss onions, tomatoes, and corn in the sauce.

4. Toast the wraps lightly on a frying pan using a small flame.

5. Toast pecans.

6. Slice luncheon meat.

7. Turn to a medium flame. Fry luncheon meat till it's crispy.

Too much~~~ this is 1 small tin of luncheon meat!

8. Using the oil from the luncheon meat, fry hashbrowns.

I made more than enough for my family's breakfast.

9. Get everything ready!

10. Squeeze some mayonnaise onto toasted wrap and place lettuce over it.

11. Just place everything on top!!! ^^

12. Roll it up! It's a little bit hard with the luncheon meat and hashbrown though. >"< Cut it in half if you want~! ^^

Green Tea Cake~! (with optional Durian cream and mixed nuts!)

I've been making so many baked goods for my friends and family! This cake, I made for my cousin's birthday! He wanted a cake with green tea, durian and nuts! It sounded gross but do-able, so here it is!

You can totally skip the durian cream and it still tastes delicious. Haha!

Ingredients:

- 330ml Soymilk
- 2 teaspoon Vinegar
- 50g Green tea powder
- 200g Flour
- 1 teaspoon Baking powder
- 1 1/2 teaspoon Baking soda
- 100g Oil
- 180g Sugar
- 1 teaspoon Vanilla paste / extract
- a pinch of Salt

1. Preheat your oven at 180℃. Line your baking pan.

2. Grease the sides of the pan with butter.

3. Combine vinegar and soymilk in a small bowl and let it curdle. You do not have to stir the mixture.

4. Can you see that your soymilk has slowly formed curds? ^^

5. Sift flour, green tea powder, baking powder and baking soda together.

6. Add sugar, oil, vanilla paste and salt to the curdled soymik mixture.

7. Mix well.

8. Now add the dry ingredients to the soymilk mixture.

9. Mix gently until there are no more lumps.

10. Transfer the cake batter to the prepared baking pan.

11. Put your baking pan into the oven! ^^ Bake for 40 minutes.

Durian Cream:

- 500ml/ 2 small packs of Cold Whipping Cream
- 3 pieces of Durian

1. Make sure your whipping cream is COLD!!! Pour it into a bowl.

2. Beat until liquid becomes stiff and peaks form. Do not overbeat. It will become liquid again, and I think there is no way to make it become solid again once it's overbeaten. I have no idea!

3. Stir in durian flesh! ^^

Assembling (the fun part):

1. Actually, I divided the cake recipe into half and bake it in 2 batches because I wanted to make a 2-layer cake. I did this because I do not have a cake saw, which will make cutting your cake evenly so much easier!

Anyway, I spread the cream in the middle of my 2 cake layers, and then I spread the cream all over to cover the entire cake.

2. Just decorate it any way you like! I toasted some pecans and placed them on top of the cake. I also had many bento decoration stuff in my kitchen, so I used them to to make it look more interesting. Haha! I made it like the animals were going camping in a park!

Soymilk and Okara Patties

I'm so sorry that I've been gone for so long!

I've been making a lot of food but I kept thinking what's the best way to present them to you...

Anyway, I promised so many recipes on Facebook, so I'm going to start with the earliest I've promised, which are Okara patties!

What is Okara?

Okara is a soy pulp you get when you make soymilk.

You can buy it readily in some countries, but not over here in mine.

So, today, I'm going to teach you how to make your own soymilk, so that you will get okara, and then you can make these delicious vegan patties!

How to make soymilk:

Picture from here.

Actually, I have many different recipes of making soymilk, but I'm going to teach you the easiest and most flavourful one.

My ratio:
60g of uncooked organic soybeans to 750ml of mineral/spring water

1. Wash soybeans thoroughly.

2. Soak them overnight in a pot for at least 8 hours. Water should be 3 times the volume of soybeans.

3. Rinse soybeans again. Pick out the bad soybeans. Fill pot with 750ml of fresh water.

4. Boil soybeans in water. When water is boiling, keep stirring for 10 minutes.

5. Transfer mixture into a blender and blend till smooth.

6. Pour blended mixture into a porous cloth bag over a colander placed over a pot.

7. You can let the mixture cool before handling it. Press cloth bag holding mixture with a ladle into the pot. When you feel that you can't press with the ladle anymore, squeeze out more soymilk using your hands. Squeeze till the pulp inside the bag is dry. This pulp is what we call Okara! ^^

7. Enjoy your homemade soymilk! Feel free to add sugar if you like sweetened soymilk! :)

How to make Okara patties:

Ingredients (Makes about 6 patties):

- 2 tablespoons of olive oil
- 4 cloves of minced garlic
- 1 red onion, minced
- 1 cup frozen mixed vegetables, rinsed and defrosted
- 1 tablespoon each of salt and pepper
- 1 1/2 cups of okara
- 1 cup of bread crumbs

1. Heat up oil in a wok over medium fire.

2. Throw in garlic and red onion first.

3. Next, throw in the mixed vegetables.

4. Season with salt and pepper.

5. Throw in okara and stir-fry till it loses most of its moisture.

6. Let it cool for a little bit, and then shape them into patties.

7. Roll patties in breadcrumbs*.

8. Line patties on baking paper in a tray**. Send them into the toaster oven/ oven at 120℃. Bake for 10 minutes. Flip them and bake for another 10 minutes.

These patties taste great on its own, in a salad, or in a bun! Enjoy!

*Get breadcrumbs quickly by tearing stale bread into pieces and pulsing them in a food processor!

**Pan-frying is possible too! ^^

P.S. A good question was asked on Facebook! How do you know it's a bad soybean? Well, it's black in colour unlike its good yellow bean friends! Discard it if you see it among your soybeans.

Also, you may notice the skin of soybeans floating about in the water when you soak them overnight. You may dispose them too. They give a really beany taste to your milk, which most Western people don't like.

Teochew Steamed Yam Cake

This is really one of my favourite food in Singapore!

It's a Teochew Steamed Yam Cake and it's super super delicious!

We call it 'kueh' actually, and it's made from rice flour instead of your normal kind of flour.

You don't need an oven for this, and you can't go wrong at all if you follow my recipe. ^^

The reason why I made this one night was because I accidentally finished eating the yam cake my mum's friend made for her! Yes!! One whole 6 inch big piece like this! I'm so terrible. -___-" She was upset because you can't buy such delicious wholesome ones outside. You know, chunky yam pieces, mushrooms that were stir-fried till they are super fragrant, generous servings of char siew sprinkled here and there, and the most delicious garnish of lard, crispy baby prawns and freshly chopped spring onions, thinly sliced chilli....

It's really so delicious!

So I told her, "AHhhh!! This is easy to make. I will make one for you right away."

And I did! Haha! And she loved it!

My version is really simple but delicious all the same! Check out the really simple ingredients. I hope you will attempt to this recipe! ^^

Ingredients (serves 4~6):

- 150g rice flour (soak in 450ml water/vegetable soup/chicken soup for at least 30 minutes before cooking)

- 400g yam (skin removed, diced, and soaked in water)

- 6 pieces of mushroom (rinsed and soaked in hot water until soft enough to dice. You can even use this flavoured water to part of your 450ml water mixture. ^^)

- 4 tablespoons of dried shrimps (soaked in water until soft, washed thoroughly and pounded or diced finely) (optional)

- 3 tablespoons sesame oil
- salt & pepper to taste

Garnish:
- 2 tablespoons of dried shrimps, fried (optional)
- 1 spring onion, cut finely
- 1 red chilli, sliced

1. In a big wok, using medium flame, stir-fry dried shrimps in sesame oil until fragrant.

2. Add in mushrooms and fry for another 3 minutes.

3. Drain diced yam and add to the wok.

4. Fry until yam changes colour.

5. Stir rice mixture till well-blended and pour into wok. Turn to small flame.

6. Add salt and pepper. Mix evenly.

7. Keep stirring the mixture in the wok until mixture thickens.

8. When mixture thickens, turn off fire. Pour mixture into a round or square container for steaming.

9. Steam for about 30 minutes. It's done when your yam is thoroughly cooked. To check, poke a fork into the yam. The yam should break easily.

10. Garnish your steamed yam cake and cut into slices to serve! ^^

Soooo yummy!!! ^^

* You can add in Char siew (Chinese BBQ pork) or chinese sausage or lean meat to your yam cake at Step 2. I had leftover mixture so I tried adding Otah in it to make it a spicy flavour!

I really love eating steamed yam cake. It's not difficult to make, just a lot of preparation work. And even so, the preparation work is mostly cutting and slicing stuff, so it's not difficult. I hope you will try it and impress your family!

You can replace yam with thinly sliced carrots, diced pumpkin, and maybe even sweet potatoes! That'd be interesting! I haven't had Steamed Sweet Potato Cake before! hehe! ^^ I may make it next time!

Where to buy:

1. Rice Flour

You can get it in any supermarkets easily on the Flour shelf.

Do not confuse it with Glutinous Rice Flour!
