Green Tea Cake~! (with optional Durian cream and mixed nuts!)

I've been making so many baked goods for my friends and family! This cake, I made for my cousin's birthday! He wanted a cake with green tea, durian and nuts! It sounded gross but do-able, so here it is!



You can totally skip the durian cream and it still tastes delicious. Haha!


Ingredients:

- 330ml Soymilk
- 2 teaspoon Vinegar
- 50g Green tea powder
- 200g Flour
- 1 teaspoon Baking powder
- 1 1/2 teaspoon Baking soda
- 100g Oil
- 180g Sugar
- 1 teaspoon Vanilla paste / extract
- a pinch of Salt

1. Preheat your oven at 180℃. Line your baking pan.

2. Grease the sides of the pan with butter.

3. Combine vinegar and soymilk in a small bowl and let it curdle. You do not have to stir the mixture.

4. Can you see that your soymilk has slowly formed curds? ^^

5. Sift flour, green tea powder, baking powder and baking soda together.

6. Add sugar, oil, vanilla paste and salt to the curdled soymik mixture.

7. Mix well.

8. Now add the dry ingredients to the soymilk mixture.


9. Mix gently until there are no more lumps.

10. Transfer the cake batter to the prepared baking pan.

11. Put your baking pan into the oven! ^^ Bake for 40 minutes.













Durian Cream:

- 500ml/ 2 small packs of Cold Whipping Cream
- 3 pieces of Durian

1. Make sure your whipping cream is COLD!!! Pour it into a bowl.

2. Beat until liquid becomes stiff and peaks form. Do not overbeat. It will become liquid again, and I think there is no way to make it become solid again once it's overbeaten. I have no idea!

3. Stir in durian flesh! ^^





Assembling (the fun part):


1. Actually, I divided the cake recipe into half and bake it in 2 batches because I wanted to make a 2-layer cake. I did this because I do not have a cake saw, which will make cutting your cake evenly so much easier!

Anyway, I spread the cream in the middle of my 2 cake layers, and then I spread the cream all over to cover the entire cake.

2. Just decorate it any way you like! I toasted some pecans and placed them on top of the cake. I also had many bento decoration stuff in my kitchen, so I used them to to make it look more interesting. Haha! I made it like the animals were going camping in a park!

  2. ohhh!! then you will love this recipe for just the matcha cake layer! you can make them into cupcakes too~! ^^ it's very easy to make and delicious!!!
